BBQ Rib Comparison: Spare vs. St. Louis vs. Baby Back | Trim, Cooking Tips, and Taste Test
What happens when you cook 3 different types of ribs the same way? This question plagued me, so I figured I’d take you on my journey to cook Ribs 3 Ways. For this experiment, I treated each rack of ribs the same way. With no variables, I had an accurate assessment of whether cooking different types of ribs really changes the cooking time and process. I trimmed the ribs similarly, then topped them with two of my bestselling rubs.
Whether you prefer hearty St. Louis ribs, leaner Baby Backs, or juicy Spare Ribs, you’re in for a treat. With this simple process, any rack of ribs can be turned into a masterpiece.

Ingredients:
• Heath Riles BBQ Everyday Rub
• Heath Riles BBQ Honey Chipotle Rub
• Heath Riles BBQ Competition BBQ Sauce
• Heath Riles BBQ Brown Sugar Honey Habanero Glaze
• Spare Ribs
• St. Louis Style Ribs
• Baby Back Ribs
Directions:
1. Fire up the Pit: Set the Traeger Ironwood XL to 275℉ using Royal Oak Charcoal Hardwood Pellets.
2. Prep the Ribs: Trim the ribs, removing stray bone pieces, hard meat flaps, discoloration, excess fat, and membranes.
3. Add Seasoning: Season the ribs with Heath Riles BBQ Everyday Rub and Heath Riles BBQ Honey Chipotle Rub. Let them rest, flip, and repeat on the other side.
4. Start Cooking: Place the ribs directly on the pit, bunching them up. Close the lid and cook for 2 hours and 15 minutes, spritzing with water halfway through.
5. Wrap the Ribs: Remove the ribs, place them in a double-lined baking pan with tin foil, and drizzle with Heath Riles BBQ Brown Sugar Honey Habanero BBQ Glaze. Wrap tightly and smoke for another 1 hour and 15 minutes.
6. Rest the Ribs: Let the ribs rest for 15-20 minutes.
7. Add Sauce: Unwrap the ribs, sauce them with Heath Riles BBQ Competition BBQ Sauce, and return to the pit for 15 minutes to set the sauce.
8. Serve: Let the ribs cool, then slice and serve.

O, yes, I do. I had to remodel my entire kitchen just to be able to have enough storage for his product. Awesome product.
I live with my son we have so many ribs we have two full cabinets full of them plus two bags of them also we combined a bunch of the rubs together that we like and put a X and on them so we know that is our mixes. We have too hot rub mixes and two regular rub mixes.and they all include heath riles rubs of some kind we love smoke it a addiction with us

Spare ribs, hands down. I don't understand why people want so much meat cut off.
You don't have to. I just like to square them up and trim any excess fat. Helps with a more even cook.
@HeathRilesBBQ I understand that. I was referring more to people choosing St Louis cut over spare ribs. It might be more visually appealing to some, but I've found the slabs are often the same price at BBQ joints that offer both. Taste and quality being equal, for my money and for backyard BBQ, I'm going spare ribs. But, to each their own. Very nice job on all 3 racks.

It could be used for making a soup stock, stir-fry or even cooked up as a special treat to add to a pet's dry dog food. @05:19 You throw even more good meat into the trash, boy you must be rich or feel privileged in life to do such a thing repeatedly while the rest of us are looking for ways to cut costs and get the most bang for our buck out expensive meat these days. @05:29 the bone you are cutting off is called the Chine bone. @07:49 I had to stop watching, your too wasteful and you're trying to teach competition BBQ cooking at home which is not your regular viewer is here to watch. Bbq competitions are the dumbest thing.
If you can cook in an oven, then you can cook with a pellet grill. I got my 575 on Memorial Day. Cooking ribs on it is stupid easy. The 2 biggest things is to be mindful of the temperature and to keep the grill clean
Pellet grills are very easy to use and makes great BBQ!

Great video. I usually just buy spare ribs and cut them to ST Louis. The trim goes to another dish I make so it works out better for me.

Can do no trim if you prefer. Just showing how to trim fat and square the ribs. Allows for a more even cook and the fat to render.
